Well this should have gotten out last Friday but better late than never!  Lesson learned, when doing a video make sure you have enough battery charged before you start.  Yikes, I had just finally had some quiet in my house, my friend had come over to use our internet to fix his computer and he came over with his two young boys, so Friday morning was the only time I had to do it.  Here is what I made:

Here is the Banana Bread Recipe (Note:  Gluten Free Adjustments)
  • 1/3c butter or margarine
  • 2/3c sugar white or brown
  • 1/4 tsp soda
  • 1/2c walnuts (optional)
  • 1c or two-three ripe bananas
  • 1 3/4c flour (gluten free version: 1.5c rice and 1/4c tapoica flour; add 1/2 tsp guar gum or xantham gum)
  • 2 eggs
  • 2tsp baking powder
  • 1/2 tsp salt
Cream margarine or butter with sugar, add eggs.  Sift dry ingredients together and add nuts.  Add flour mixture alternately with mashed bananas to creamed mixture, beating well after each.  Pour into greased and floured loaf pan.  Bake at 350 for one hour until knife comes out clear.

My eldest daughter has celiac so when I bake for her these are the adjustments I make.
